
Spanish Rice
Flavourful rice, inspired by Spanish Paella. You could leave away the lemon zest if you want because the artichokes provide some a sour flavour as well.
Ingredients
4-5 servings

Rice basmati
Tomatoes canned
Artichocke hearts
Peas frozen
Feta organic
1/2
600 ml
1 tea sp
1 tea sp
2 tea sp
1 TBL sp
1
2 cloves
Lemon zest
Stock veg or chicken
Chilli
Cumin
Paprika powder
Oregano
Onion yellow
Garlic
Prep
10 min
- Pre-heat oven to 200°C
- Dice onion and mince garlic
- Cut artichocke hearts into quarters
- Cut feta into cubes
- Rinse the rice under cold water (helps to avoid sticky rice)
Cook
20 min

Sauté onion
high heat ~3 min

Roast feta and artichocke hearts
~20 min at 200°C
Boil water for stock (300 ml)

Add garlic, spices (chilli, cumin, paprika powder), oregano and rice
medium heat, until mushrooms have shrunk ~3 min
Add tomatoes and stock
mix well and bring to a boil. Then reduce heat to simmer and put on the lid. Let it cook with lid on for ~15 min
Add peas and lemon juice to personal taste
~3 min

Make it a dinner party
- Garnish with fresh Parsley and lemon wedges
