Saffron Pasta

Saffron is the most expensive spice in the world, but luckily you only need very little. Simmering the sauce for a total of 25 minutes allows the taste to fully develop.

  1. Dice onion and mince garlic
  2. + Cut zucchini into quartered slices (while sauce simmers)
  3. + Cut bell pepper into thin strips (while sauce simmers)

Cook

Sauté onion

medium/high heat ~3 min

Add tomatoes and garlic

Add saffron by rubbing the threads between your fingers before adding to the sauce

simmer on low heat ~15 min

Add coconut milk, zucchini, bell pepper and lemon zest
