
Saffron Pasta
Saffron is the most expensive spice in the world, but luckily you only need very little. Simmering the sauce for a total of 25 minutes allows the taste to fully develop.

Tomatoes canned
Zucchini
Bell pepper
Walnuts or pine nuts
a few threads

Coconut milk
Lemon zest
Onion yellow

- Dice onion and mince garlic
- + Cut zucchini into quartered slices (while sauce simmers)
- + Cut bell pepper into thin strips (while sauce simmers)
Cook
30 min

Sauté onion
medium/high heat ~3 min
Add tomatoes and garlic
Add saffron by rubbing the threads between your fingers before adding to the sauce
simmer on low heat ~15 min

Cook pasta
~10 min

Add coconut milk, zucchini, bell pepper and lemon zest
simmer ~10 min

Make it a dinner party
- Garnish with fresh basil leaves
- Replace walnuts with toasted pine nuts
