Peanut Butter Noodles

This was originally an Italian recipe. You could turn it more Asian by using different vegetables. The winning combination is the peanut butter with soy sauce and ginger.

Ingredients

4-5 servings

Noodles

Tomatoes fresh
Peas or beans
Bell peppers yellow

2 TBL sp
ca. 30 g
400 ml

Peanut butter
Soy sauce
Ginger
Stock

Chilli

Onion yellow

Prep

10 min

  1. Dice onion and mince garlic
  2. Cut bell pepper into short strips
  3. + Cut tomatoes into big cubes (while cooking)

Cook

20 min

pan 1b

Sauté onion

medium/high heat ~3 min

Add ginger, bell pepper and chilli

stir ~2 min

Add soy sauce, peanut butter and stock (400 ml)

stir and bring to boil/simmer ~5 min

pan 2

Cook noodles

see packaging ~4-10 min

pan 1 continued

Add tomatoes

simmer ~5 min

Add peas and mix in the noodles

~3 min
