
Peanut Butter Curry
A rich and hearty curry. Adding the tomatoes later preserves their structure and creates a juicy bite.

Tomato paste
Lemon or Lime juice
Stock vegetable
Curry garam masala
Chilli
Onion yellow

- Dice onion and mince garlic
- Cut bell peppers into short strips
- + Cut tomatoes into big cubes (while cooking)
Cook
25 min

Sauté onion
medium/high heat ~3 min
Add garlic, bell peppers, chilli and curry
~2 min
Add peanut butter, tomato paste and stock (500 ml)
stir and bring to boil/simmer ~10 min

Cook rice
~10 min

Add tomatoes, lentils and lemon juice
~8 min

Make it a dinner party
- Garnish with fresh coriander and serve with naan
- Use high-quality tomatoes
