Peanut Butter Curry

A rich and hearty curry. Adding the tomatoes later preserves their structure and creates a juicy bite.

Ingredients

Lentils pre-cooked
Bell pepper yellow

Peanut butter
Tomato paste
Lemon or Lime

Stock vegetable

Curry garam masala
Chilli

Onion yellow
Garlic

Prep

  1. Dice onion and mince garlic
  2. Cut bell peppers into short strips
  3. + Cut tomatoes into big cubes (while cooking)

Cook

25 min

Sauté onion

medium/high heat ~3 min

Add garlic, bell peppers, chilli and curry

~2 min

Add peanut butter, tomato paste and stock (500 ml)

stir and bring to boil/simmer ~10 min

pan 2

Cook rice

~10 min

pan 1 continued

Add tomatoes, lentils and lemon juice

~8 min

  • Garnish with fresh coriander and serve with naan
  • Use high-quality tomatoes
