Oven Polenta

Polenta is a powder made from corn that makes a deliciously smooth meal together with some cheese and margarine. It’s an Italian dish so you can find it in the pasta section.

Ingredients

4-5 servings

Polenta instant

Mushrooms
Zucchini
Tomatoes

100 g
1100 ml
3 TBL sp
2 TBL sp

2 TBL sp

Cheese grated
Stock veggie
Margarine
Balsamic vinegar

Oregano

Prep

  1. Cut mushrooms into quarters
  2. Halve zucchini into thin quarters
  3. Cut tomatoes into cubes
  4. Pre-heat oven to 200°C

Cook

10 + 20 min

Sauté mushrooms

medium/high heat, until mushrooms shrink and moisture is gone ~8 min

Cook stock (1100 ml for 250 g Polenta)

Reduce heat and slowly stir in the polenta

make sure it doesn’t burn

Add the margarine and half the cheese and mix well

Add zucchini, tomatoes, oregano and balsamic vinegar

Spread the polenta into an oven dish. Add the vegetables on top and sprinkle with rest of cheese

~15 min at 200°C
