Orange Prune Rice

Orange juice with cinnamon is a wonderful combination, especially with the prunes. It sounds sweet but it’s more savoury than you might expect. You can serve it with a salad or other veggies; I used broccoli.

Ingredients

Rice Basmati

Carrots
Cashews or courgette
Prunes (dried plums)
Broccoli

300 ml
300 ml

Orange juice fresh
Stock vegetable

Cinnamon

Onion yellow

Prep

  1. Dice onion
  2. Cut prunes into small pieces
  3. Cut carrots into slices
  4. + Cut broccoli (while cooking rice)

Sauté onion and carrots

medium/high heat ~5 min

Mix orange juice with stock

You need around 1,5 times the amount of rice (for 350 g that is around 600 ml)

Add rice, cinnamon, prunes and cashews

~2 min

Add the orange juice/stock mix

Bring to boil, then reduce heat to simmer and cover with a lid until liquid is soaked up and rice is done
