Moroccan Soup

This is a simpler version of a classic Moroccan dish and a great option for eating low carb for a night. Simmering the sauce for some time creates a deep flavour.

Ingredients

4-5 servings

Tomatoes canned
Chickpeas pre-cooked
Lentils pre-cooked
Carrots
Bell pepper

Bread optional

ca. 30 g
ca. 70 g

Ginger
Tomato paste
Lemon

Cumin
Cinnamon
Paprika powder
Stock vegetable

Onion yellow
Garlic

Prep

10 min

  1. Dice onion and mince garlic
  2. Cut carrots into slices
  3. Cut bell pepper into small strips

Cook

20 min

pan 2 red

Sauté onion and carrots

medium/high heat ~3 min

Reduce heat and add ginger and garlic

~4 min

Add spices and tomato paste

~1 min

Add bell pepper, canned tomatoes and stock (ca. 500 ml)

simmer ~15 min

Add chickpeas, lentils and some lemon juice

simmer ~5 min

  • Garnish with fresh coriander
  • Look up 'authentic harira soup' to add more complexity to the taste
