
Grilled Aubergine Wraps
The first time I grilled aubergines in a sandwich maker, my dad walked into the kitchen and asked whether I was cooking meat, that’s how great it smelled.

Aubergines
Tomatoes fresh
Black beans
Corn
ca. 100 g

ca. 30 g

Hummus
Fresh mint
Ginger
Cumin
Chilli
Paprika powder
Onion
Prep

- Dice onion and mince garlic
- Cut tomatoes into big cubes
Cook
15 min

Sauté onion
medium/high heat ~3 min
Add chilli, cumin, paprika powder and ginger
~3 min

Grill aubergines
Option 1: cut aubergines into four thick slices and grill in a sandwich maker. Then cut into strips.
Option 2: cut aubergines into strips or cubes and grill in oven or frying pan


Add tomatoes, corn and black beans
stir and simmer ~5 min
Serve the wraps with hummus, mint, the grilled aubergine and the sauce
