Green Lemon Spaghetti

A straightforward and fresh spaghetti. You could even leave away the cream to make it lighter.

Ingredients

4-5 servings

Spaghetti or other pasta

Zucchinis
Spinach
Peas frozen

ca. 90 g
200 ml

2 cloves

Pesto
(Soy) cream
Lemon juice and zest

Onion yellow
Garlic
Parmesan

Prep

  1. Dice onion and mince garlic
  2. Cut zucchinis into quartered slices

Cook

20 min

Sauté onion

medium/high heat ~3 min

Add zucchinis and garlic

~3 min

pan 2

Cook pasta

~10 min

pan 1 continued

Add spinach, cream, lemon zest, pesto and lemon juice to personal taste

stir and bring to boil/simmer. The later you add the lemon juice the stronger its flavour will be ~8 min

Add peas

    We vonden het recept niet slecht maar het is wel even wennen. Het juist doseren van de citroen luistert nog al nauw. De volgende keer zou ik diepvriesspinazie nemen ipv verse.
