Creamy Gnocchi

Gnocchi are a mix between pasta and dumplings. They are often made from potatoes and you can find them in the pasta section. They only need 3 minutes to cook.

Ingredients

Gnocchi

Mushrooms chestnut
Green beans or courgette
Bell peppers red and yellow
Arugula

200 ml

(Soy) cream

Cumin
Paprika powder
Oregano
Thyme

Onion yellow
Garlic

Prep

  1. Dice onion and mince garlic
  2. Cut mushrooms into slices
  3. Cut bell peppers into cubes
  4. Take off top from beans halve them

Cook

20 min

Sauté onion and mushrooms

medium/high heat ~4 min

pan 2

Cook green beans

~8 min

shock in cold water when done to prevent overcooking. Add to the sauce at the end.

Add bell pepper and garlic

~3 min

Add cumin, paprika powder, oregano and thyme

~1 min

Add (soy) cream

simmer ~8 min

pan 2 green

Cook gnocchi

they're ready when they float. This depends on the type of gnocchi ~3-10 min

Serve the gnocchi with the sauce and arugula
