Brussels Sprouts with Apple

Not everyone likes brussels sprouts, but its bitter taste creates a delicious combination with the sweet apples, sour vinegar and umami from the cheese.

Ingredients

Farfalle or other pasta

Apples Fuji
Brussels Sprouts
Walnuts
Spinach

200 ml
2 tea sp

(Soy) cream
Vinegar white wine
Cheese grated

Onion yellow
Garlic

Prep

15 min

  1. Dice onion and mince garlic
  2. Cut apples into cubes
  3. Halve Brussels Sprouts
  4. Pre-heat oven to 200°C

Cook

10 + 20 min

Sauté onions and apples

medium/high heat ~3 min

pan 2

Cook pasta

After 3 minutes add brussels sprouts

cook for ~5 more minutes so pasta and sprouts are almost done

Add garlic, vinegar and spinach

Stir and let spinach cook in/thaw ~6 min

oven

Add everything into an oven dish and top with cheese and walnuts

~20 min at 200°C

Variations

The original recipe uses Gorgonzola, which is more expensive but also makes the flavour a lot more intense
